Rubies in Coconut Milk
2 Servings, Prep Time: 30 minutes, Total Time:30 minutes
- 1/3 cup coconut milk
- 5 drops red food coloring
- 1/3 cup sugar
- 1/2 cup tapioca floor
- 1/4 cup water
- 1/2 can water chestnut
Tips and Techniques
1-I really appreciate frozen coconut milk when it comes to preparing desserts. You can get by with the can coconut milk. But frozen coconut milk tastes a thousand times better. 2-Take half a can of water chestnuts, about 10-15 pieces. Use fresh water chestnuts if you like, but the ones in the can are already peeled and ready to be used. Slice each chestnut into half, making two round disks. Make two cuts into the two disks to make 6 equally sized pieces. Set chestnut pieces into a bowl and drop the red food coloring and a teaspoon of water and mix well. If you would like to use other natural food coloring, I would recommend beet juice that comes from boiled beets.
3-The next step is to turn the red chestnuts into rubies. Drain the chestnuts of any juice. Put tapioca flour in a big bowl. Drop the chestnuts in and shake the bowl around to coat the chestnuts with flour. Scoop the chestnuts into a strainer to get rid of the excess flour. Put it into another bowl. Here is the secret: spray some water on the chestnuts with a misting spritzer. Put them back in the flour bowl. Coat them with flour again. If you want bigger rubies, repeat the spraying and flouring.
4-Boil a pot of water. When boiling, dump the coated rubies in. The cooked rubies will float and show their beautiful color. Scoop them up in a strainer and dump them in ice water.
5-In a small cup add sugar and water to make syrup. Microwave the cup for 3-4 minutes depending on your microwave.
6-Divide the rubies into equal amounts and set in two bowls. Pour out water from the bowls. Add half of the coconut milk and half of the syrup to make one serving. Serve with crushed ice in the summer time.

Nasi Lemak Recipe (Malaysian Coconut Milk Rice with Anchovies Sambal)
Ingredients:
Coconut Milk Steamed Rice
2 cups of rice
3 screwpine leaves (tie them into a knot as shown above)
Salt to taste
1 small can of coconut milk (5.6 oz size)
Some water
Tamarind Juice
1 cup of water
Tamarind pulp (size of a small ping pong ball)
Sambal Ikan Bilis (Dried anchovies sambal)
1/2 red onion
1 cup ikan bilis (dried anchovies)
1 clove garlic
4 shallots
10 dried chillies
1 teaspoon of belacan (prawn paste)
1/4 teaspoon of salt
1 tablespoon of sugar
Other ingredients
2 hard boiled eggs (cut into half)
3 small fish (sardines or smelt fish)
1 small cucumber (cut into slices and then quartered)
Method:
- Just like making steamed rice, rinse your rice and drain. Add the coconut milk, a pinch of salt, and some water. Add the pandan leaves into the rice and cook your rice.
- Rinse the dried anchovies and drain the water. Fry the anchovies until they turn light brown and put aside.
- Pound the prawn paste together with shallots, garlic, and deseeded dried chilies with a mortar and pestle. You can also grind them with a food processor.
- Slice the red onion into rings.
- Soak the tamarind pulp in water for 15 minutes. Squeeze the tamarind constantly to extract the flavor into the water. Drain the pulp and save the tamarind juice.
- Heat some oil in a pan and fry the spice paste until fragrant.
- Add in the onion rings.
- Add in the ikan bilis and stir well.
- Add tamarind juice, salt, and sugar.
- Simmer on low heat until the gravy thickens. Set aside.
- Clean the small fish, cut them into half and season with salt. Deep fry.
- Cut the cucumber into slices and then quartered into four small pieces.
- Dish up the steamed coconut milk rice and pour some sambal ikan bilis on top of the rice.
- Serve with fried fish, cucumber slices, and hard-boiled eggs.
